For thousands of years, oils have been important in food preparation in India. Metal frying pans that are remarkably similar in design to those used today have been found in archaeological excavations of the Harappan civilization of circa 2000 Before Christ. A number of oleaginous materials such as sesame, rape and mustard seeds and coconut were known sources of oil. In Sanskrit literature of about 500 Before Christ there is a specific reference to an oil-press, Juices were extracted from vegetable materials as early as 1500 Befoe Crits using either a mortar and pestle or a grinding stone working on a flat stone. Linguistic evidence suggests that it is from these two crushing systems that presses for both oil seeds and sugar cane developed in the form of a mortar-and-pestle arrangement powered by animals. This system is commonly called as the ghani, or the kolhu or chekku.
Ghani is the process of mechanically separating oil by only pressing and crushing the oil seeds in a wooden mortar and pestle. Cold pressed oil concept was first invented by the Ancient Rishis of India to extract oil from various oil seeds by using a wooden churner (Ghani). In ancient times the wooden ‘ghani’s’ were driven by bullocks. In modern days the wooden ghani remains the same, but the bullocks are replaced by electric motor.
